Today I decided to make mango bread with the mangos I got in my Bountiful Basket. I got a really great recipe from the internet. http://www.food.com/recipe/hawaiian-mango-bread-30296
Hawaiian Mango Bread
By Lorac on June 03, 2002
Ingredients
2 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon baking powder
2 teaspoons cinnamon
3 eggs, well beaten
3/4 cup canola oil
1 1/2 cups granulated sugar
2 cups peeled and diced fresh mango (about 3 large mangos)
1/2 cup raisins
1/2 cup macadamia nuts chopped(I didn't add these)
1/2 cup grated coconut
Directions
Preheat oven to 350°F.
Grease and flour two 9x5 inch loaf pans.
Sift the flour, baking soda, baking powder and cinnamon into a small bowl.
In a large mixing bowl, combine eggs, oil and sugar and mix with dry ingredients until well blended.
Fold in mango, raisins, nuts and coconut.
Pour into loaf pans and bake 45 to 50 minutes or until a toothpick inserted in the center comes out clean.
Let cool 10 to 15 minutes, unmold and let completely cool on baking racks.
It tasted really good, but next time I think I will add more coconut and no raisins. I am sure I will be making this again.
